Sharif SADEK et la participation du Prof. Mohammad MASRI.  <\/p>\n<p>&nbsp;<\/p>\n<p>Prof.Tarek HOUSSAM ELDEEN, a soulign\u00e9 que l&rsquo;Universit\u00e9 de Homs accorde une grande importance \u00e0 la recherche scientifique qui r\u00e9pond aux besoins de la communaut\u00e9 et contribue au d\u00e9veloppement du secteur des industries alimentaires, indiquant que cette recherche repr\u00e9sente une \u00e9tape importante dans la recherche d&rsquo;alternatives alimentaires qui am\u00e9liorent la valeur nutritionnelle de produits de base tels que le pain.   <\/p>\n<p>&nbsp;<\/p>\n<p>Le jury a \u00e9t\u00e9 compos\u00e9 des membres suivants: Prof. Mohammad MOHAMMAD, Prof. Antoine YOUSSEF, PROF JIhad SAMAAN et Prof. Abdel Aziz ABBARAH.    <\/p>\n<p>&nbsp;<\/p>\n<p>La chercheuse a expliqu\u00e9 que cette \u00e9tude vise \u00e0 \u00e9valuer l&rsquo;effet de l&rsquo;ajout de farine de quinoa \u00e0 la farine de bl\u00e9 \u00e0 diff\u00e9rentes proportions sur les caract\u00e9ristiques de certains produits de boulangerie pendant le stockage, \u00e0 travers : <\/p>\n<p>L&rsquo;\u00e9tude des propri\u00e9t\u00e9s chimiques.   <\/p>\n<p>L&rsquo;\u00e9valuation rh\u00e9ologique <\/p>\n<p>L&rsquo;\u00e9tude de la qualit\u00e9 du pain arabe.      <\/p>\n<p>L&rsquo;\u00e9valuation de la qualit\u00e9 de diff\u00e9rentes types de pain.  <\/p>\n<p>L&rsquo;\u00e9valuation sensorielle et statistique. <\/p>\n<p>A la fin de son expos\u00e9, le jury a d\u00e9cern\u00e9 le grade de doctorat \u00e0 la chercheuse Hiba Abdel Jalil SHATOUR avec
